The more we travel the world for spectacular coffee the better we get at it. This coffee from the Dota region of Central Costa Rica is our proof. When Alan asked to visit some of the farms in Santa Maria de Dota, he Minor Picado and discovered his new micro mill. Alan knew we had to share this remarkable coffee with you. The beans from Finca La Pastora are unique in that they are dried on African style raised beds, a very rare practice in Central America, which allows for even drying from above and below. The coffee in this jar is "Honey Processed" meaning that the coffee is dried with the mucilage layer still attached to the parchment. This process combined with our roasting aproach gives the cup a balanced sweetness, notes of green grape, and a mild pepper finish.
